Entropy Pt. II

Blended Flemish sour ale. The base beer for this blend was fermented with our RAF mixed fermentation culture and conditioned on estate grown apple and pear cider from our northern PA farm for three months in stainless steel. This was then blended with the last of our oldest barrel stock from February of 2017, and an additional component of old stainless aged sour ale. The result is a deep complex sour ale with notes of stone fruit and dried herbs with a sharp acidity characteristic of the classic ales of the Flanders region of Belgium. 5% ABV
